Dessert Crepes
 
In blender mix:
 
3 eggs
1 cup milk
1/3 cup water
 
Add:
 
1 Cup flour
1/4 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons sugar
 
Blend all ingredients. Let rest while you heat your pan.
 (I use a cast iron fajita pan, but you can use a skillet.)
 
Spray with butter flavored spray.  When hot, pour in 1/2 cup of mixture and roll pan to cover all of the bottom with the crepe mixture.
 
Mixture will bubble on top, loosen edges with rubber or silicon spatula.  When light brown on underside, carefully loosen under crepe and turn.
 
Place any curd or sauce in the center and roll dough up from one side to the other.  (like a burrito but don't fold the top or bottom edges)
 
Transfer to plate and top with powdered sugar.
 
 
 
Dessert Cream
 
In large clean bowl, pour small carton of whipping cream.  Beat until peaks form but not stiff. DO NOT ADD SUGAR.  Fold in one half jar of any flavored curd. 
 
Use a dollop on an angel food cake with extra berries or other fruit.  I like using strawberries, blueberries, or raspberries with the lemon or lime and mandarin orange slices with the orange curd.
 
If the whipped cream is whipped a little longer it can also be used to fill home made cream puffs or in between layers of white or yellow cake, instead of frosting.
